courgette and mushroom ragout on a bed of noodles |
10 oz button mushrooms, wiped and halved
1 medium onion, sliced
1 clove garlic, finely chopped
3 medium courgettes
1oz butter
5 fl.oz double cream
5 fl.oz white wine
1 tablespoon fresh tarragon, chopped
2 tablespoon olive oil
- Cut the courgettes into quarters lengthways and then dice into 1cm chunks. Fry in olive oil for two minutes, remove and set aside.
- Melt butter, then fry onion, mushrooms and garlic for 7-8 minutes.
- Add the wine and leave to reduce for 8-10 minutes. Add tarragon at this step if using dried herb.
- Add courgettes, stir and season. Heat through.
- Stir in cream and simmer gently for 3-4 minutes.
- Add fresh tarragon and serve on bed of fettucine or similar pasta.
